Every year we select the best block of Semillon from our Double River Estate vineyard and dedicate it to our barrel fermentation program. Only the ripest and most balanced fruit from this specific block gets picked separately and handled with extra care in the cellar. Slow, cool fermentation will start off in stainless steel and then the juice will get transferred to French oak midway through primary fermentation.The most suitable barrels for our terroir were being utilized, with 50% new and 50% neutral, to showcase the true varietal characteristics with a slight accent of oak for complexity.
Eight barrels were filled during a slow and gentle transfer, fermented sur lie, and battonaged once per week for 9 months to enhance aromatics and increase the mouth feel. About 50% of this wine underwent malolactic fermentation, to ensure a sense of roundness in the mid -palate, preserving a creamy texture but also balancing the bright fruit and fair acidity.
This wine shows expressive notes of granny smith apple, honeysuckle and straw on the bouquet. After a few minutes in your glass, hints of fresh cut herbs, wet rock and dried apricot will be more noticeable in the aroma. At room temperature, intriguing floral notes and perfumy tones will come to life, with accents of toasty oak in the background. Ripe stone fruit, along with great minerality, linger in the mouth feel, with bright acidity framing the balanced palate. The “sweet” fruit notes are being enhanced by just enough viscosity to integrate beautifully with subtle oak and deliver a long, pleasant finish.
This Semillon can stand alone and can be bright, lively and refreshing, but will be even better with dishes such roasted chicken with lemon and tarragon, grilled pork chops or shellfish cooked in a cream sauce.
