Only the best blocks from our Double River Vineyard were chosen for our estate Cabernet Sauvignon. A small portion of Syrah from Block 8 was blended with this Cabernet to bring distinction and personality to this wine. All the individual blocks from the estate fermented separately and spent an extended amount of time on the skins during the extraction period. Only French oak was chosen for the maturation process, while no racking was performed during barrel aging, and the wine remained on the lees during this time.
Once opened, this structured Cabernet will reveal hints of dark, jammy fruits, but also earthy and savory tones. Hints of over-ripe cherry, black currant, wet stone and "meaty" character, making it more versatile and intriguing.
The mouthfeel is intense with ripe berry fruit, creating a "sweet" and complex sensation and long finish. Framing acidity and ample tannin build a beautiful structure around the fruit, and provide this wine with great aging potential. The vibrant fruit nuances along with the earthy characteristics give this wine plenty of personality and make it more desirable when paired with grilled pork chops, a roasted beet salad or an aged Gouda.
