This elegant wine from our Double River Estate Vineyard is comprised of 75% Cabernet Franc and 25% Cabernet Sauvignon. The youthful and floral Cabernet Franc is complemented by the more robust and complex Cabernet Sauvignon. We prefer to hand-pick these varietals early in the morning, at cool temperatures to preserve vibrant and expressive nuances in the cellar. Our Cabernet Franc spends extra time on the skins, extracting beautiful color during a cool and slow fermentation. This allows for a fine balance between the anthocyanins and tannins. All the free-run juice is kept separate from the hard press, to showcase the “heart” of the wine during barrel aging. We select our finest French and American oak barrels to mature our Cabernet Franc for 20 months.

The fragrant aroma exhibits hints of potpourri, raspberry and cotton candy. It is followed by prominent notes of blackberry, rhubarb, black currant, coconut and subtle oak in the background. The pleasant mouthfeel offers a burst of sweet brambly fruits in the mid palate, followed by beautiful layers of darker fruit toward the end. The ample tannin and lively acidity provide this wine with serious character and considerable aging ability. This Cabernet Franc will pair well with roast turkey and cranberry sauce, lamb gyros, goat cheese or a beef and root vegetable stew.
